Butter Chicken of Kababees
An all-time favorite and arguably the most internationally famous Indian curry, our Butter Chicken (Murgh Makhani) is pure bliss for the taste buds. This dish features tandoor-grilled pieces of chicken simmered in a velvety smooth tomato and butter cream sauce that’s mildly spiced and slightly sweet[10]. The result? A luxurious curry that is rich without being heavy, and spiced without being hot – a perfect entry point for curry newcomers and a beloved comfort for long-time fans.
To make Butter Chicken, we first marinate boneless chicken (usually tender thigh pieces) in yogurt and a special spice mix – a gentle blend including garam masala, cumin, a bit of chili powder for warmth, and ginger-garlic paste. The chicken is then roasted (often in our tandoor oven) until it has a wonderful char and smokiness. These flavorful pieces are then introduced to our makhani (“with butter”) sauce – a blend of ripe tomatoes pureed to a silky consistency, plenty of butter (true to the name), a dash of cream, and aromatic spices like kasuri methi (dried fenugreek leaves) which give that signature aroma. The sauce is cooked slowly until the tomatoes lose their raw edge and everything merges into a creamy, slightly orange gravy that clings lovingly to the chicken.
On your platter, this curry shines bright. It’s typically a beautiful sunset-orange color, topped with a drizzle of cream and maybe a pat of butter melting on top, plus a sprinkle of fresh cilantro for contrast. The aroma is mild but inviting – you might smell hints of tomato, a touch of sweetness, and the unique perfume of fenugreek. ButterChicken’s sauce is plentiful and just begs to be soaked up by rice or swiped with naan. As you take a bite, you’ll notice how tender the chicken is (from both the marination and grilling) and how the sauce has a depth of flavor – tangy from tomatoes, buttery, with just a mild kick of spice that quickly gives way to a creamy sweetness.
This platter, like the others, comes with rice or naan (your choice). Many customers love to pour the sauce over the basmati rice and let every grain get coated in that creamy goodness. Others prefer tearing off pieces of naan and scooping up chicken and sauce – the softness of the bread complements the rich curry perfectly. The side salad provides a nice fresh crunch to contrast the richness, and the cold soda helps cleanse the palate between indulgent bites.
Butter Chicken is often the dish that converts the wary into curry lovers. It’s also a hit with kids due to its mellow profile. Yet, it’s equally adored by aficionados for its harmonious flavor – it’s not one-dimensional; it’s layered with the subtleties of spice without the heat. It’s indulgent but not in a way that overwhelms you. In fact, despite the butter and cream, many find the sauce to be quite light on the palate because of its smoothness.
If you’re looking for a “safe bet” that still delivers on authentic taste, you cannot go wrong with Butter Chick. It’s celebratory and comforting all at once – often the centerpiece of special occasion menus, but also the kind of dish you crave on a random weeknight because it’s just so satisfying. Dip your naan, savor it with rice, or even sip a spoonful like soup – it’s that lovely. Many customers tell us our Butter Chicken platter is their personal reward after a long week. Treat yourself to it and you’ll see why this iconic curry has a fan following around the globe.
(And yes, it’s as close to eating love with a spoon as it gets. We’ve seen more than a few customers close their eyes in bliss on that first bite. Trust us – it’s normal. Butter Chicken tends to have that effect!)
